Zucchini Cookies

After reading this article I was inspired to try my hand at a batch of Zucchini cookies celebrity trainer Harley Pasternak mentions his wife makes.

Baking can be so therapeutic and I just LOVE how it makes my apartment smell so good. For my first try at Zucchini cookies I opted to not go out buying ingredients but to use what I already had in my kitchen. Researching other similar recipes also helped me switch up the ingredients a bit.  I did not add brown sugar, so I used a bit more peanut butter, one mashed banana(in place of the yogurt i did not have) 1 cup of Zucchini instead of 4, and 1/4 cup of honey.

I am eager to try these again going by the recipe mentioned in the article.  My final product was such a good treat and I can imagine chocolate protein powder would be a great touch!  I was also impatient and did not let the mixture sit in the fridge at all, but definitely will next time. (This way, they baked at 350 in about 15 minutes.) They were a little on the chewy side and I prefer crunchy, but still, a good cookie and a great way to sneak more veggies into your diet.  Truly amazing how you cannot taste the Zucchini at all!

My recipe included:

1 cup  shredded zucchini

1 cup peanut butter

1 mashed banana

1 egg (whites only) beaten

1/4 cup honey

1.5 cups rolled oats

1 tablespoon vanilla extract

1 tablespoon cinnamon

1 teaspoon salt

2 teaspoon baking soda

Chocolate Chips

As I previously mentioned, I baked these based off what I already had in the kitchen.  Will update once I try the recipe mentioned in the article to see how they differ!
